Vanilla Sweet Potato Puree
5 ea Sweet Potatoes, peeled (SKU #89122)
8 oz Butter, softened (SKU #861016)
1/2 cup Heavy Cream (SKU #861306)
1 tbsp Vanilla Extract (SKU #68182)
Kosher Salt (SKU #92274)
Cut sweet potatoes into large chunks and add to a large pot. Cover the potatoes with water and season the water with salt. Simmer the sweet potatoes until tender, then drain. In the bowl of a food processor, combine potatoes, butter, heavy cream and vanilla extract. Pulse until smooth and mixed. Season with kosher salt, if necessary.
