Summer Shrimp Pasta

The perfect side dish: Pasta salad with shrimp and fresh tomatoes with gluten-free pasta. Great for summer cook outs!

 

Ingredients

1 box Gluten Free Penne (SKU #862091)
12 oz Aqua Star Cooked Shrimp, peeled, tail off (SKU #44220)
1 pint Cherry or Grape tomatoes, halved (SKU #89098)
¾ cup Olive Oil (SKU #30072)
Juice of 3 Lemons (SKU #860865)
2 Tbsp Italian Seasoning (SKU #68178)
1 clove Garlic, minced (SKU #860873)
Salt, to taste (SKU #92274)
Pepper, to taste (SKU #68258)
½ cup Parmesan Cheese, grated (SKU #25694)

Instructions

Cook pasta according to package directions. After draining the pasta, rinse with cold water till cool. While pasta is cooking, thaw shrimp according to package directions and set aside. In a large bowl, mix olive oil, lemon juice, honey, herbs, garlic, salt and pepper. Add in the pasta, shrimp, tomatoes, and cheese. Gently mix. Chill until ready to serve.

CHEF TIP: Keep in the refrigerator for up to 4 days.
