Green Bean Almondine
2# Fresh Green Beans (SKU #89143)
8 oz Almonds (SKU #862156)
8 oz Butter (SKU #861016)
1 ea Lemon, zested (SKU #860865)
Kosher Salt, to taste (SKU #92274)
Black pepper, to taste (SKU #68258)
Fill a large pot with water and bring to a boil. Season the water liberally with kosher salt. While the water is coming to a boil, snip the stem end off of the green beans. Blanch the green beans in boiling water for three minutes. Drain the green beans and submerge in an ice-cold water bath. Heat oven to 350 degrees and spread almonds on sheet pan in a single layer. Bake almonds for 5-7 minutes. Don't walk away from the oven – keep checking so the almonds don't burn! When you're ready to serve green beans, heat butter in a large sauté pan over medium heat for about 5 minutes. Toss almonds and lemon zest into the green beans. Season with salt and pepper.
