1/2 Box Yellow Cake Mix (SKU #862141)
3 cups Water
2/3 cup Vegetable Oil (SKU #30093)
1 qt Heavy Cream (SKU #861306)
1/4 lb Confectionary Sugar (SKU #861621)
1 tsp Vanilla Extract (SKU #68182)
1 pt Blueberries (SKU #89110)
1 lb Strawberries (SKU #89112)

Heat standard oven to 360 degrees. Prepare a half sheet pan with non-stick spray or butter. Pour 1.5 cups water into a bowl of a stand mixer. Add cake mix to water. Using a paddle attachment, mix on low for 1 minute. Next, mix batter on medium speed for 3 minutes. Add remining water and oil gradually while mixing on low speed. Scrape bowl and paddle. Mix batter on low speed for 2 minutes. Do not over mix. Pour batter into sheet pan. Bake for 31-35 minutes. Let cake cool.
Note: Depending on the size of your stand mixer, you may have to make two batches.
In the meantime, pour heavy cream into bowl of stand mixer with whip attachment. Whip on high speed until cream resembles yogurt texture. Add confectionary sugar and vanilla extract. Whip on high speed again until cream has stiff peaks. Once sheet cake is cool, frost with whipped cream. In the top left corner of the cake, use the blueberries to form a square (using photo as a guide). Then use sliced strawberries to form rows of red alternating with piped whipped cream.
