Shrimp Ceviche

Ingredients

44225  -  1# Aqua Star Shrimp, tails removed
88823  -  1 Medium Shallot, diced
88406  -  1 Medium Jalapeños, seeded & diced
88205  -  2 Tomatoes, seeded & diced
88193  -  3 Medium Radishes, sliced thin
88413  -  2 tablespoons Cilantro, chopped
88030  -  1 ea Avocado, diced
92275  -  Kosher Salt, to taste
60223  -  Tortilla Chips
25086  -  ¼ cup Feta Cheese
88055  -  3 tsp Lime Juice
88406  -  1 Tablespoon Jalapeño, seeded and diced

 

Instructions

Chop the shrimp ½ in pieces and transfer to a bowl. Pour the lime juice over the shrimp and allow to marinate for 15 mins. Meanwhile, mix together shallot, jalapeño, tomato, radish and cilantro in a large bowl. Add to shrimp mixture and allow to marinate for additional 10 minutes. Stir in the avocado. Season the ceviche with salt to taste. Serve with tortilla chips.
